Blueberry Soft Cookie (4:1)

Ingredients:
 g KetoCal 4:1 Powder Unflavoured
 g Pura, Cream: Cream, Double Thick
 g Oil, rice bran
 g Baking Products: Baking Powder
 g Eggs: Chicken Egg, whole, raw, fresh
 g Water: Water
 g Devondale, Butters: Unsalted Butter
 g Fruit, fresh: Blueberries, raw, edible portion
 g McCormick, Spices: Cinnamon Ground

Directions:

  1. Preheat oven to 170°C/gas mark 3 
  2. Mix KetoCal with cream, oil, baking powder, egg, liquid sweetener and water in a bowl 
  3. Melt butter and add to mixture 
  4. Chop blueberries into small pieces, add to mixture, add a pinch of cinnamon 
  5. Divide mixture into 4, and place on a baking tray or silicone mat 
  6. Spread out thinly into a circle or square cookie shape 
  7. Cook for 10 mins or until golden brown

Chef's Tips

  • Be careful using canned blueberries, as this may contain syrup and therefore more carbohydrate. 
  • To make multiple cookies at a time, multiply ingredients by how many cookies you wish to make and divide mixture evenly on baking tray.
