Savoury Muffins (MAD)

Ingredients:
g KetoCal 4:1 Powder Unflavoured
g Macro (Woolworths), Nuts: Almond Meal
g Baking Products: Baking Powder
g Devondale, Butters: Unsalted Butter
g Eggs: Chicken Egg, whole, raw, fresh
g Milk, fresh: Cow, Whole, full-fat (3.6% fat)
g Mainland, Cheese: Grated, Cheddar, Tasty
g Vegetables, fresh: Onion, Spring, raw
g Hans, Luncheon Meats: Country Fresh, Premium Oven Baked Leg Ham
g Vegetables, fresh: Mushrooms, Button / Common / Flat, raw
Directions:
- Preheat oven to 170°C/gas mark 3
- Fry ham in a frying pan until slightly crispy
- Combine KetoCal, almond meal and baking powder in a bowl
- Melt butter and combine with egg and milk, then add to dry ingredients
- Add cheese, spring onions, ham and mushrooms to the mixture
- Spoon the mixture into a muffin tray
- Cook for 30-35 mins, or until golden brown
- Remove from the oven and allow to cool
Chef's tips
- Use a silicone muffin tray to make it easier to remove muffins
- Muffins can be frozen
- To make multiple muffins at a time, multiply ingredients by how many muffins you wish to make and divide the mixture evenly in muffin tray
