Blueberry Soft Cookie (4:1)

Ingredients:
g KetoCal 4:1 Powder Unflavoured
g Pura, Cream: Cream, Double Thick
g Oil, rice bran
g Baking Products: Baking Powder
g Eggs: Chicken Egg, whole, raw, fresh
g Water: Water
g Devondale, Butters: Unsalted Butter
g Fruit, fresh: Blueberries, raw, edible portion
g McCormick, Spices: Cinnamon Ground
Directions:
- Preheat oven to 170°C/gas mark 3
- Mix KetoCal with cream, oil, baking powder, egg, liquid sweetener and water in a bowl
- Melt butter and add to mixture
- Chop blueberries into small pieces, add to mixture, add a pinch of cinnamon
- Divide mixture into 4, and place on a baking tray or silicone mat
- Spread out thinly into a circle or square cookie shape
- Cook for 10 mins or until golden brown
Chef's Tips
- Be careful using canned blueberries, as this may contain syrup and therefore more carbohydrate.
- To make multiple cookies at a time, multiply ingredients by how many cookies you wish to make and divide mixture evenly on baking tray.
