Chicken & Cauliflower Cheese (MAD)

Ingredients:
 g KetoCal 4:1 Powder Unflavoured
 g Oil, rice bran
 g Mainland, Cheese: Grated, Cheddar, Tasty
 g Water: Water
 g Bulla, Cream: Thickened Cream (35% Milk Fat)
 g Vegetables, fresh: Cauliflower, raw
 g Chicken Raw: Breast Meat, no skin, raw
 g Devondale, Butters: Unsalted Butter

Directions:

  1. Preheat oven to 160°C/gas mark 2-3
  2. Dice the chicken breast
  3. Melt the butter in a frying pan and sauté the chicken breast for approx 5 mins, or until browned
  4. Cheese sauce: Mix KetoCal, oil, 5 g cheese (keep the rest aside for later), water and cream in a small saucepan. Stir on a low heat until the cheese has melted (do not boil)
  5. Boil the cauliflower until it is soft
  6. Place the boiled cauliflower and cooked chicken into an ovenproof dish, then cover with the cheese sauce and sprinkle the remaining cheese on top
  7. Cook in the oven for approx 5-10 mins
Chef's tips
  • Keep some cheese aside to sprinkle on top at the end before baking
