Cheese & Onion Tomato Tart (MAD)

Ingredients:
 g KetoCal 4:1 Powder Unflavoured
 g Macro (Woolworths), Nuts: Almond Meal
 g Devondale, Butters: Unsalted Butter
 g Water: Water
 g Vegetables, fresh: Tomato, ripe, raw
 g Onion, spring, raw
 g Eggs: Chicken Egg, whole, raw, fresh
 g Mainland, Cheese: Grated, Cheddar, Tasty

Directions:

  1. Preheat oven to 160°C/gas mark 2-3
  2. Place KetoCal and almond meal into a bowl and rub in butter with fingertips
  3. Sprinkle water over the top and mix until it becomes a stiff crumbly pastry, then roll into a ball
  4. Line a tartlet tin by pressing the pastry into the edges
  5. Chop the tomatoes and spring onions, then mix in a bowl with the egg and half of the cheese (put the rest of the cheese aside for later)
  6. Fill the tartlet tin with the filling
  7. Sprinkle the remaining cheese over the top of the tart
  8. Cook for 10-12 mins or until golden brown
Chef's tips
  1. Avoid overworking the dough, that way you will always have a light, delicious pastry
  2. You can make your pastry in advance and freeze. When ready to use, defrost thoroughly and use with the tart filling
