Green Capsicum & Tomato Soup (MAD)

Description:
This recipe is for patients following a Modified Atkins ketogenic Diet (MAD). The ketogenic diet must be used under strict medical supervision. Please refer to your Dietitian before making any adaptations to the recipes.
Ingredients:
ml KetoCal 4:1 Powder Unflavoured (reconstituted)
g Capsicum, green, fresh or frozen, raw
g Gourmet Garden, Herbs: Garlic Paste
g Tomato, puree, commercial
g Oil, rice bran
g Massel Stock Powder Chicken Style
g Water: Water
g Ardmona, Vegetables, canned: Tomatoes, Chopped or Diced, No Added Salt or Sugar
Directions:
- Place capsicum, tomato and garlic purees, and oil into a pan, and cook for approx 4 min
- Dissolve stock powder in hot water
- Add stock and canned tomatoes to vegetables and simmer for approx 10 min
- Add KetoCal to the soup and heat for a further 1 min
- Blend until smooth (skip this step if you want a chunky soup)
Chef's tips
- To make multiply servings, multiply ingredients by how many servings you wish to make and divide the mixture evenly once prepared
- You can use crushed, diced or whole canned tomatoes, depending on whether you want a smooth or chunky soup
