Green Capsicum & Tomato Soup (MAD)

Description: This recipe is for patients following a Modified Atkins ketogenic Diet (MAD). The ketogenic diet must be used under strict medical supervision. Please refer to your Dietitian before making any adaptations to the recipes.

Ingredients:
 ml KetoCal 4:1 Powder Unflavoured (reconstituted)
 g Capsicum, green, fresh or frozen, raw
 g Gourmet Garden, Herbs: Garlic Paste
 g Tomato, puree, commercial
 g Oil, rice bran
 g Massel Stock Powder Chicken Style
 g Water: Water
 g Ardmona, Vegetables, canned: Tomatoes, Chopped or Diced, No Added Salt or Sugar

Directions:

  1. Place capsicum, tomato and garlic purees, and oil into a pan, and cook for approx 4 min
  2. Dissolve stock powder in hot water
  3. Add stock and canned tomatoes to vegetables and simmer for approx 10 min
  4. Add KetoCal to the soup and heat for a further 1 min
  5. Blend until smooth (skip this step if you want a chunky soup)
Chef's tips
  1. To make multiply servings, multiply ingredients by how many servings you wish to make and divide the mixture evenly once prepared
  2. You can use crushed, diced or whole canned tomatoes, depending on whether you want a smooth or chunky soup
