Cheese & Bacon Muffins (MAD)

Description: This recipe is for patients following a Modified Atkins ketogenic Diet (MAD). The ketogenic diet must be used under strict medical supervision. Please refer to your Dietitian before making any adaptations to the recipes.

Ingredients:
 g KetoCal 4:1 Powder Unflavoured
 g Hans, Bacon: Bacon Rashers with Rind
 g Macro (Woolworths), Nuts: Almond Meal
 g Milk, fresh: Cow, Whole, full-fat (3.6% fat)
 g Baking Products: Baking Powder
 g Devondale, Butters: Unsalted Butter
 g Mainland, Cheese: Grated, Cheddar, Tasty
 g Eggs: Chicken Egg, whole, raw, fresh
 g Vegetables, fresh: Onion, Spring, raw

Directions:

  1. Preheat oven to 170°C/gas mark 3
  2. Fry bacon in a frying pan until crispy
  3. Mix all ingredients together and spoon into a muffin tray
  4. Cook for 30-35 mins or until golden brown
  5. Remove from the oven and allow to cool (if muffin is bubbling around the sides, this is fine, it will be absorbed into the muffin once cooled)
Chef's tips
  1. Use silicone muffin tray to make it easier to remove the muffins
  2. Muffins can be frozen
  3. To make multiple muffins at a time, multiply the ingredients by how many servings you wish to make and divide evenly in a muffin tray
