Beef, Mushroom & Spinach Curry (MAD)

Description:
This recipe is for patients following a Modified Atkins ketogenic Diet (MAD). The ketogenic diet must be used under strict medical supervision. Please refer to your Dietitian before making any adaptations to the recipes.
Ingredients:
g KetoCal 4:1 Powder Unflavoured
g Oils: Rice Bran
g Beef, mince, >10% fat, raw
g Vegetables, fresh: Mushrooms, Button / Common / Flat, raw
g Capsicum, green, fresh or frozen, raw
g Vegetables, fresh: Onion, Spring, raw
g Tomato, puree, commercial
g Gourmet Garden, Herbs: Garlic Paste
g Ardmona, Vegetables, canned: Tomatoes, Chopped or Diced, No Added Salt or Sugar
g Keen's, Spices: Curry Powder, Traditional
g Spinach, fresh, raw
g Water: Water
Directions:
- Heat oil in a frying pan
- Sauté beef mince until browned
- Chop the mushrooms, capsicum and spring onion, then add this to the beef with the tomato and garlic purees. Cook on a medium heat for approx 5 mins
- Add tomatoes, curry powder and spinach. Cook for a further 5 mins on low heat
- Mix KetoCal with water to form a paste, then add to the curry sauce and serve immediately
Chef's tips
- To make multiple servings at a time, multiply the ingredients by how many servings you wish to make and divide the mixture evenly once prepared. You can freeze each portion and reheat at your convenience.
