Mushroom & Spinach Curry (4:1)

Description: This recipe is for patients following a Classical 4:1 ketogenic Diet. The ketogenic diet must be used under strict medical supervision. Please refer to your Dietitian before making any adaptations to the recipes.

Ingredients:
 g KetoCal 4:1 Powder Unflavoured
 g Oil, rice bran
 g Mushroom, common, fresh or frozen, raw
 g Vegetables, fresh: Capsicum, Green, raw
 g Vegetables, fresh: Onion, Spring, raw
 g Tomato, puree, commercial
 g Tomato, whole, canned in tomato juice, undrained
 g Curry powder
 g Spinach, fresh, raw
 g Water: Water
 g Gourmet Garden, Herbs: Garlic Paste

Directions:

  1. Heat oil in pan 
  2. Add mushrooms, capsicum, spring onion, tomato puree and garlic paste to pan and cook on a medium heat for 5 mins 
  3. Add tomatoes, curry powder and spinach, cook for 5 mins on a low heat 
  4. Mix the KetoCal with water to form a paste, then add to the curry sauce until dissolved and serve

Chef's Tips

  • To make multiple servings, multiply ingredients by how many servings you wish to make and divide mixture evenly once prepared. 
  • You can freeze each portion and reheat at your convenience.
